Tammee Thompson

Tammee Thompson's path has always been shaped by curiosity and a willingness to follow new challenges wherever they lead. She held senior operating roles in corporate environments, guiding complex businesses through periods of growth and change, while exploring parallel pursuits in real estate, theatre, and culinary arts.

Even as her corporate career advanced, she felt a steady pull toward food and wine. She graduated at the top of her class from the French Culinary Institute, earned the Wine Scholar Guild Champagne Masters with Honors, and completed WSET through UC Davis, tasting in vineyards and kitchens across California, Europe, South America, and Asia.

AERILYN grew from more than 100 conversations with wine industry professionals and a deep appreciation for how farming choices, winemaking decisions, and time shape a wine's character. It brings together every part of who she is: operational rigor, culinary training, creative spirit, and a desire to build something that connects people.

Founder

Alisa Jacobson

UC Davis V&E ’01. Twenty-plus vintages in California, Oregon, Washington, and Australia, including 14 years building Joel Gott Wines from 35 k to 1 M cases. Alisa founded Turning Tide Wines in 2018, then added two sister labels—AJ (California blends) and Rare North (Willamette Valley Pinot Noir)—in 2022. She owns Cornerstone Winery (Santa Ynez) and chairs the West Coast Smoke Exposure Task Force.

At AERILYN she oversees base wine production from press fractions through fermentation and she manages grower relations in California and Oregon.

Custom Crush & Grower Relations

UC Davis-trained with 25 harvests on the Central Coast, Amy founded Ranchero Cellars in 2008 and today runs Amy Butler Wine Consulting, advising more than forty boutique labels on custom-crush logistics and traditional method programs. At AERILYN she oversees blending strategy, dosage trials, and ensures each cuvée keeps its coastal lift and precision.

The Cuevas brothers transformed an 80,000 square foot Santa Maria facility into C2 Cellars, a one-stop shop for bottle-fermented sparkling wine. Manuel also co-founded Land of Saints and consults for a roster of Central Coast brands. Their team oversees our tirage bottling, riddling and disgorgement.
